More and more customers are choosing to share appetizers and meals at restaurants, especially as food prices rise. For their part, of course, restaurants want as many orders as possible and, therefore, higher revenue per customer.

According to the Wall Street Journal, dishes that are difficult to share are starting to appear more and more frequently on menus. At the same time, restaurants encourage customers to try more dishes before the main meal.

In 2023, the average bill at 49% of US restaurants was cheaper, while 53% of restaurants had lower profits compared to the previous year. At the same time, eating out has become more expensive: The cost of eating out has increased by 5.3% over the past 12 months.

Restaurants don't want to stop sharing food, managers insist. Instead, there are specific strategies, such as creating single-bite dishes like a duck ration intended for one person, but leaving no menu options that customers can share.

When customers share fewer plates or don't order alcohol, restaurants are likely to struggle to meet increased obligations, such as higher labor costs.

In 2022, 21% of diners said they had split a meal in the past to cut costs, and 58% said they would continue to do so.

Larger tables – those with six or seven people – often have the cheapest average bill per person when sharing dishes between them. To change this, restaurants changed their menus. More expensive dishes were added to it, including a variety of appetizers that are not intended for two or more people.

Customizing sizes as well as prices allows customers to split meals while keeping the bill high per person.
